My Small Batch

Seeing the past few posts about creating your own hot sauce, I decided to take another stab at mine.

The previous batches I've made, I think I went a little nuts on ingredients, tossing in just about everything but the kitchen sink. I went back and tried a much simpler recipe: piquin peppers, garlic, onion, salt and vinager. I have the sauce macerating right now and will strain and put in bottles after about a week, but initially I like it. Good flavor and the piquins give a nice kick where you don't go "Holy hell!" after a taste (Granted I'm a bit of a lightweight when it comes to heat tolerance.)

I might split the batch and strain one batch and leave the other as-is and compare the two. I'll let you know in a week.
